Ingredients You’ll Need

  • Elbow Noodles – I use traditional elbow noodles, but you can use any type of pasta.
  • Milk – I use whole milk. You can use 2% milk, but the cheese sauce won’t be as rich and decadent.
  • Heavy Whipping Cream – You can use half and half instead of heavy whipping cream if that’s what you have.
  • Eggs – Makes the mac and cheese smooth and creamier.
  • Paprika – Compliments the flavor of the cheese.
  • Dried Basil – Adds extra flavor.
  • Cajun Seasoning You can make your own or use store bought.
  • Salt and Pepper – To taste.
  • Cheese – I use a mix of Colby Jack and Spicy Monterrey Jack.

How To Make This Recipe

Step 1:

Preheat oven to 350 degrees F. Grease a 9×13-inch casserole dish and set aside.

Step 2:

Cook the elbow noodles according to package directions.

Step 3:

While the noodles are cooking, whisk together the milk, heavy whipping cream and eggs until well combined.

Step 4:

Beat in the paprika, 2 teaspoon of the basil, 2 teaspoons of the cajun seasoning, salt and pepper, to taste.

Step 5:

Once the noodles are cooked, do not strain and add immediately into the milk mixture. Add 4 cups of the cheese and stir to coat the noodles in the cheese-milk mixture.

Step 6:

Pour the mac and cheese mixture into the prepared casserole dish. Top with remaining 2 cups of cheese and follow with the remaining 1 teaspoon each of basil and cajun seasoning.

Step 7:

Cover the casserole dish with foil and bake for 35 minutes. Remove the foil and continue baking until the cheese is completely melted.
