    Expert Tips

    • If you want to add sprinkles to the frosting, make sure you add them once you get the consistency perfect.
    • These cookies are great for baking and taking somewhere because they are so quick and easy. If you need a simple dessert cookie, then consider making these!
    • Use room temperature ingredients. This helps the butter cream properly to mix with the sugar.
    • Chill the dough. The dough can be made days ahead. Keep wrapped in parchment and plastic wrap.

    Variations

If you want to change up this recipe, here are a few ideas:

    • Add 1 cup of chocolate chips to the cookie dough for extra sweetness. You can use white, milk, or dark chocolate chips to switch things up.
    • Use a different flavor of cake mix, like yellow or devil's food. You can experiment to see which kind of cake you like best!
    • Try using a buttercream frosting or cream cheese frosting. Switching up the frosting can help change up the cookie really quickly!
    • For a fun twist, dip the cookies in melted chocolate once they're assembled. Again, you can make this white, milk, or dark chocolate.
    • Make mini sandwich cookies by using a 1 tablespoon cookie scoop instead of a 1 ½ to 2 tablespoon cookie scoop.

    Storing & Freezing

Storing: These cookies are best served the same day they're made, but you can store any leftover cookies in an airtight container. If they are frosted, store in the fridge.

Freezing: You can make these cookies ahead of time, store them in the freezer for up to 3 months. When you're ready to eat them, just let them thaw at room temperature.
