    • Dehydrated Strawberries: The true star of the show is the dehydrated strawberries that you'll use in these cookies!

    To make the optional frosting, you'll need:

    • Butter, Softened 
    • Powdered Icing Sugar
    • Vanilla Extract
    • Cream or Milk

    Step-By-Step Instructions

    Step 1:

    Line two baking sheets with parchment paper or silicone mats.

    Step 2:

    Prepare the sugar cookie mix according to package directions.

    Step 3:

    Place the dehydrated strawberries in a blender or food processor and blitz until it resembles a fine powder. Place the strawberry powder in a small bowl and set aside.

    Step 4:

    Use a cookie scoop and portion out the sugar cookies. Roll the sugar cookies in the dehydrated strawberry powder.

    Step 5:

    Place the rolled sugar cookies on the prepared baking sheets at least 2 apart.

    Step 6:

    Bake according to the sugar cookie package’s directions.

    Step 7:

    Meanwhile, if planning to serve with the frosting, place all of the frosting ingredients in a small bowl and beat together for 2 minutes. Adjust the consistency with additional sugar or cream, as desired.

    Step 8:

    Once the cookies are cooled, you can frost them with the optional vanilla frosting and sprinkle with remaining strawberry powder.

    • Don't have dehydrated strawberries? You can use freeze-dried strawberries instead. Just place them in a food processor or blender and pulse until they're a fine powder.
    • If you want an extra tart cookie, add ¼ teaspoon of citric acid to the strawberry powder.
    • If you want an extra sweet cookie, add 1 tablespoon of sugar to the strawberry powder.

    Variations

    • If you're not a fan of strawberries, you can try this recipe with another dried fruit. Just substitute the dehydrated strawberries for your favorite dried fruit.
    • Want to change up the flavor of these cookies? You can add 1 teaspoon of extract to the cookie dough. Some good options include: almond, lemon, or orange.

    Freezing: These cookies can also be frozen, without the frosting. Just place them in a freezer-safe container and freeze for up to 2 months. When you're ready to enjoy, thaw at room temperature for 30 minutes and then frost as desired.
