HOW TO MAKE Lemon Shortbread Cookies

Step 1: In a large mixing bowl, beat the butter, granulated sugar, and lemon zest until light and fluffy.

Step 2: In a separate bowl, whisk together the flour and salt.

Step 3: Gradually add the flour mixture to the butter mixture, mixing until just combined.

Step 4: Divide the dough in half and shape each half into a log about 1 ½ inches in diameter. Wrap the logs tightly in plastic wrap and chill in the refrigerator for at least 30 minutes.
