    Yogurt granola bars with berries are incredibly easy yogurt bars made with yogurt, granola and fresh berries. They make a perfect on the go breakfast or snack. It’s so easy to whip up, healthy and packed with protein. You’ll want a batch in your freezer at all times.

    They are healthy enough to eat for breakfast and yummy enough to enjoy as a dessert or snack!

    Ingredients You’ll Need

    • Coconut Yogurt: You can also use either plain yogurt or Greek yogurt.
    • Granola: Adding granola gives the yogurt bars some added depth.
    • Coconut Oil: Mixed with the granola to make the base of the bars. You can also use butter in place of the coconut oil.
    • Strawberries, Blueberries and Raspberries: You can use any fruit you like - frozen or fresh, cut into bit size pieces.

    Step-By-Step Instructions

    Step 1:

    Line a rimmed baking sheet with parchment paper; set aside.

    Step 2:

    In a large bowl, mix together the granola and coconut oil until fully combined. To form the granola base, pour the mixture onto the baking sheet and press into the bottom. If the mixture is well combined, it should stick firmly to the bottom. If not, you can add more coconut oil to the mix and repeat the process until it works.

    Step 3:

    Pour the yogurt over the granola base and spread over the granola base using a wooden spoon.

    Step 4:

    Place the berries evenly over the yogurt. If desired, sprinkle additional granola over the top for a little more crunch on the top.

    Step 5:

    Place the sheet in the freezer for at least 3 hours. Once frozen, cut into 16 bars.

    Tip: Remove the sheet from the freezer 10 minutes before cutting or eating the frozen breakfast bars. It will be easier to cut into bars, and the taste will also be better.

    Expert Tips

    • Cut the parchment paper to fit in a baking dish to help avoid the parchment paper from sticking to the bars.
    • Use a long sharp knife to cut the bars to avoid a sawing or chopping motion to cut.
    • Once the bars are completely frozen, transfer them to a zip top freezer safe bag or airtight container to prevent unnecessary freezer burn.

    Variations

    • Use different fruit! You can use any variety or combination of fruit - fresh or frozen!
    • Try adding peanut butter to the granola base! Almond butter or any nut better would work great too.
    • Add your favorite toppings! More berries, chocolate chips, or nuts are some options.

    Storing & Freezing

    Freezing: Since these bars are meant to be served frozen, you will want to keep them stored in the freezer. Stored in an airtight container, these yogurt bars will last 2-3 months in the freezer.

    Be sure to press the granola and oil mixture firmly down into the pan together, adding additional oil as needed.

    Can I use Greek yogurt?

    Absolutely! Greek yogurt is more than acceptable to use. You can also feel free to use your favorite flavor of yogurt too!

    What else can I add to these yogurt bars?

    Unsweetened shredded coconut, chopped pistachios, almonds, pecans, cranberries, cinnamon, cocoa powder, or anything else you enjoy can be mixed in with the yogurt.

    How can I add more sweetness to my yogurt bars?

    The fruit will add natural sweetness, but for additional sweetness you can add a tablespoon or two of maple syrup or honey or use a flavored yogurt.

    • Nonstick Cookie Baking Sheets, 3-Piece

    Ingredients
      

    • 5 cups granola
    • ½ cup coconut oil
    • 2 cups coconut yogurt
    • 2 ounces strawberries sliced
    • 2 ounces blueberries
    • 2 ounces raspberries
